Strawberry Cheese Cake

So i decided to share the recipes i usually have tried and which are perfect, i went to a party and decided to take this homemade delicious cake which was basically made perfect by trying it 3 times and ever since that day, this has been the perfect cake ever.
Its easy to find, easy to understand, easy to prepare, easy clean-up AND easily achieved delicious results.

Ingredients

For the biscuit layer

150g Graham cracker crums or crushed digestive biscuits
2 tbsp melted butter
2 tbsp caster sugar
½ tbsp freshly grated lemon zest, very finely chopped.

For the strawberry layer

1 tbsp lemon juice
1 tbsp water
2 tsp cornflour, dissolved in a little cold water or orange juice
100g/4oz caster sugar
1kg/2lb 3¼oz strawberries, cleaned and sliced

For the cheesecake layer

2 eggs
1/2 cup sugar
1 tablespoon all-purpose flour
3 packets of 8 ounces creamcheese, room temperature (I prefer Philadelphia cream cheese)
1 packet of 14 ounces sweetened condensed milk
1/4 cup lemon juice

Method

Combine graham cracker crumbs, sugar, lemon zest and butter. Press onto the bottom of an ungreased 9 inch. springform pan. Refrigerate for 30 minutes.

In a mixing bowl, beat cream cheese until slightly fluffy. Beat in condensed milk. Add lemon juice; blend well. Add eggs, beat on low just until combined.

Pour the cream cheese mixture over crust. Bake 300 degrees F for 45-50 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Run a knife to loosen ends and to avoid cracks, Cool for an 1 hour longer. Refrigerate overnight. Remove side of pan.

Sauce

In a blender or food processor, combine strawberries, cornstarch, water, sugar and lemon juice. Cover and process until smooth. Pour into a saucepan; bring to a boil. Boil and keep stirring for 2 minutes, Add 2 drops of red food color to give a better look.
Pour sauce over the cheese cake. Refrigerate for 2 hours.

Serves 16. Enjoy... :)
